Fresh milk has a pH of 6. How do you think the pH will change as it turns into curd? Explain your answer.


The pH is defined as a scale which is used to measure the concentration of hydrogen ion present in the solution. The value of pH lies from 0 to 14. The pH below 7 stands for an acidic solution and above 7 stands for a basic solution. The pH at 7 stands for a neutral solution. The pH of fresh milk is 6 that shows that the milk is slightly acidic.  The milk is converted into curd by the bacteria called Lactobacillus. This bacteria converts the lactose into lactic acid, whose pH is 3.5. This makes the milk more acidic and hence impart sour taste to the curd.
