Oil and fat containing food items are flushed with nitrogen. Why?

Answer:

The process by which the substance containing oils and fats are exposed to air they get oxidized and changes its smell, taste, and colour called rancidity. The substance which reduces the oxidation of food and prevents its deterioration is called antioxidant. The common antioxidants used are nitrogen gas, butylated hydroxyanisole, vitamin A, etc. The nitrogen gas is an inert gas that acts as an antioxidant and prevents the oxidation of food. So, nitrogen gas is added in the bag of food items.
