How does the cork act as a protective tissue?

Answer:

When a plant grows older the epidermis undergoes certain changes and it is replaced by cork cells. Cork cells are dead cells that act as a protective tissue. The walls of cork cells are very thick and filled with a chemical substance called suberin. Suberin makes the cells impermeable to water and gases.
